Chocolate Bar by Bullion
Founded by Max nearly 10 years ago, he’s one of the UK’s pioneering bean-to-bar chocolatiers, transforming raw cacao beans into award-winning chocolate from scratch. Here, you can build your own chocolate drink, choosing from classic or unusual bases, and mix with a baked selection of your choice of homemade brownies and cookies!
Their creativity and craft have even made them the official chocolate makers for the Roald Dahl Museum, how’s that for a golden ticket?

Clapping Seoul
Founder Jay grew up in Korea, where food said everything: “I missed you”, “How was your day?” His dad’s late-night Korean Fried Chicken runs became core memories, and the spark behind Clapping Seoul.
Years later, as a PhD student, Jay couldn’t find anything that hit the same, so he made it himself. A few exploded batters later, Clapping Seoul was born.
Now joined by Emma, they lead a kitchen that’s all good vibes, bold flavours, and homemade street food that sticks with you, not just because of the sauce.

Mae Thai
Founded by Eaint, this family-run kitchen is a love letter to her mum, grandma, and the Thai cooking traditions passed down through generations. No recipes, no shortcuts, just instinct, heart and heritage.
Mae Thai means mother’s kitchen, and that’s precisely what it is. Every dish is made by Eaint or her family, with care you can taste-especially in their signature Pad Thai, a sweet-savoury masterpiece that takes over four hours to perfect.
From fiery Pad Kra Pao to zingy papaya salad, Mae Thai serves bold, home-cooked flavours that bring people back again and again. Now preparing to open at TBC, they’re staying true to what matters most: food made with love.
Three generations cook here, and one more is already watching closely from the high chair.

Jimmy’s Burgers
Burgers born from obsession.
For Paddy and Jimmy, burgers aren’t just food; they’re a full-blown passion project. Since 2019, the duo has been on a mission to craft the perfect smash burger, one crispy edge and molten middle at a time.
They’ve nailed every detail: hand-rolled patties, carefully chosen fat ratios, and top-tier ingredients. Ginger Pig beef, Paul Rhodes buns, the works. No shortcuts. No compromises.
The result? Burgers that are big on flavour and heavy on craft. The “Oklahoma” goes full comfort with caramelised onions and gherkins.
It’s fast. It’s fresh. It’s northern to the core. And once you’ve tried it, there’s no going back.

+84
+84 isn’t just Vietnam’s country code, it’s Gray’s way of calling home through food. Born and raised in the buzzing streets of Ho Chi Minh City, Gray grew up surrounded by the sizzling sounds and bold flavours of Vietnamese street food. After moving abroad in 2018, something was always missing, so he built +84 to bring those soulful flavours (and memories) to the UK.
Co-founded with Linda, his taste-testing partner-in-crime, +84 is where you’ll find freshly baked pan mei loaded with homemade pâté, mayo, and pickles, plus saucy rice and noodle dishes inspired by his childhood. Most recipes came straight from his parents, and every dish tells a story.
From the first bite to the last, +84 is a nostalgic trip to Gray’s roots, packed with flavour, family, and a whole lot of heart.

Fuego 1987
Fuego 1987 is where bold Californian street food meets Mexican American fusion, inspired by founder Hamza’s travels through the sun-soaked taco trucks of the West Coast.
Known for their juicy, slow-cooked birria tacos, Fuego also brings playful, exclusive twists, like their Hot Cheetos-crusted mac ‘n’ cheese bites.
The entire menu is halal, their tacos are gluten-free and corn-based, and the line-up covers everyone, from birria and steak lovers to vegans and vegetarians craving chilli non carne with serious flavour.

Inamo Sukoshi
Inamo Sukoshi is the bold, street-smart little sibling of London’s pioneering Inamo Restaurant, bringing the award-winning sushi and Asian street food to the heart of London.
Co-founder Noel and business development lead Alex wanted to take fan favourites from their bricks-and-mortar restaurants and reimagine them for the fast-paced buzz of venues like Tower Bridge Collective. Think signature Dragon Rolls, melt-in-your-mouth Korean BBQ ribs, and a brand-new Chicken Katsu Curry created just for this space.
“Sukoshi” means “cute and little” in Japanese, a nod to their playful spirit, but don’t be fooled by the name. These dishes pack serious flavour. With nearly two decades of experience, the team has built a reputation for quality, innovation, and style.
Proud winners of the Golden Chopsticks Award for Best Street Food UK 2023, and finalists in both Just Eat’s London’s Best Dish and the Street Food Championships Dish of the Year, Inamo Sukoshi is a must-try for sushi lovers and Asian street food fans alike.

House of Habesha
Bold Flavours, Rooted in Home
Inspired by the word ‘Habesha’, a term that unites Eritrean and Ethiopian people, House of Habesha serves comforting, flavour-rich dishes made using traditional methods, with a warm welcome on the side.
From slow-cooked lamb curries to fragrant vegan stews, every plate is packed with heritage and heart. Whether you go for injera or rice, plant-based or meat, it’s all bold, hearty, and mostly gluten-free.
And for a twist? Their fusion dishes, like loaded fries and spiced-up burgers, bring Habesha flavour to familiar favourites.

Sapore
Sapore has officially rolled into Tower Bridge Collective, bringing the kind of authentic Italian cooking that would make Nonna proud.
From pillowy schiacciata sandwiches stuffed to the brim, to rich, velvety risottos and gnocchi that practically hug you from the inside. Every dish at Sapore is rooted in tradition, but served with a fresh, modern twist.
You’ll want to start with Ninna’s meatballs (trust us, she insists) and definitely save room for the pistachio tiramisu. Smooth, creamy, and worth every spoonful. Their secret? Well-guarded family recipes.

Baity
When Ali opened Baity, his mission was simple: bring the bold flavours and deep-rooted traditions of Palestinian cooking to the UK.
Since then, Baity has become a local favourite, known for its hand-whipped hummus (72 hours in the making), signature Musakhan chicken, and that viral Palestinian Sunday roast with 9-hour pomegranate lamb and za’atar roasties.
Their cuisine has been mentioned in The Independent and the BBC, and their commitment to giving back to the community has been widely lauded.

Thatziki
Two brothers. One bright blue food truck. And a dream to bring proper Greek street food to the UK, Thatziki-style.
What started in a Worsley car park went viral fast. Now, Jack and Luke are serving up their gyros from spots in Chorlton, Leeds, Salford Quays, and soon to be in London!
Everything’s made from scratch, from secret marinades to the daily tzatziki, using no frozen meat, no shortcuts. Just bold flavours, real Greek ingredients, and a whole lot of graft.

Leopard Pie
Leopard Pie is flipping the UK pizza scene on its head, one Honey Butter Ring (HBR) at a time. Born in Manchester and already a cult favourite, they’re known for their signature Neapolitan pizzas and those golden, gooey, garlic-butter-soaked rings that locals can’t stop talking about.
Founder Lee’s journey started during a tough chapter in life. His daughter faced kidney failure, and without hesitation, he donated his kidney. Through that emotional time, food became a comfort, and pizza became a passion. In 2020, with the world on pause, Lee started hosting free Thursday night pizza parties to thank the NHS workers, and word quickly spread.
Today, they stay true to what made them special: generous spirit, bold flavours, and only the finest ingredients imported straight from Italy. Whether you’re here for the pizza, the HBRs, or the story, Leopard Pie delivers every time.

Lakshmi’s Indian Kitchen
Founded by a mother-and-son duo Lalita Patel and Urvesh Parvati’s, Lakshmi’s is the spirited younger sister of Gujarati Rasoi. What began as a Broadway Market stall in 2006 has grown into a London food story spanning Borough Market, Dalston, and beyond.
Named after Urvesh’s grandmother, Lakshmi’s keeps the family values at its core: whole ingredients, everything made from scratch, and flavours that honour tradition while playing with modern twists. This is proof that heritage tastes even better when it’s shared.
